The bees collect nectar from the white clover flower pastures throughout the Canterbury high country and produce a delicate, smooth and creamy honey.
One of the most versatile white honeys, which made it the perfect choice as a base for our organic fusion range.

Clover is a climate superhero
Clover grows wild across New Zealand and is planted as nutrient-rich food for livestock, but with the bees’ help, clover is also one of the most underrated climate heroes.
The humble clover plant has the power to reverse soil degradation, drive nitrogen deep into the soil and create resilient biodiversity habitats for bees to thrive.
One of our most successful regenerative agriculture projects in partnership with Mt Whitnow in North Canterbury has:

- Restored the quality of the topsoil
- Regenerated the earthworm populations
- Reversed the structural degradation in the soil

Recipe: Ginger Honey Poached Pears
These ginger-honey poached pears are a simple, stunning dessert. It’s quick and easy to make ahead of time, too.
Serves 4.
Ingredients
- 4 large or 8 small firm but ripe pears (Bosc or Bartlett are good)
- 1 slice lemon peel
- 1 cinnamon stick
- 1/2 of a vanilla pod
- 1/2 cup TranzAlpine Honey and Ginger
- 4 cups water
- Mascarpone or crème fraiche to serve.
Method
- Add water, honey, cinnamon, vanilla and lemon peel to a medium-sized saucepan.
- Simmer for 5 minutes.
- Peel and core the pears, and place them into the simmering syrup.
- Place the pot over medium heat and bring up to a boil.
- Turn the heat down to low and let the pears simmer, covered with baking or parchment paper to help keep them submerged in the liquid for 15 -20 minutes or until translucent and fork-tender.
- Remove the pears, spices and lemon peel from the pot with a slotted spoon.
- Transfer the pears to a medium bowl.
- Turn the heat up to medium and simmer the poaching liquid until it has reduced to about 1 cup and a light syrup consistency, about 35-40 minutes, stirring every five minutes or so.
- Pour the reduced liquid over the pears and refrigerate, covered, for at least three hours or up to overnight.
Serve with mascarpone or crème fresh.
