Organic Manuka Honey, Raisin and Rolled Oat Cookies

Cookies. Just the smell of them as they are ready to come out of the oven is like comfort food alone. But nothing beats that first bite of a warm, chewy, buttery raisin rolled oat cookie especially when it is packed with the natural goodness of Organic Manuka Honey.

The rich flavour of butter mixed with honey mixed into a scrumptious mix of chunky old fashioned oats and sweet raisins will make your foodie heart flutter.

If that wasn’t enough to get your oven on, you must know that there is also no added sugar – this recipe uses Organic Manuka Honey as the only sweetener. So it is a healthy batch of cookies to boot!

Ingredients:
Makes 14 cookies

1/2 cup butter (softened)

100ml TranzAlpine organic Manuka honey

1 teaspoon vanilla essence

1 egg

1 cup old fashioned rolled oats

1 cup all purpose flour

1 cup raisins

1 teaspoon cinnamon powder

1/2 teaspoon baking powder

1/3 teaspoon fine salt

Method:

  1. Beat the softened butter with the honey and vanilla using an electric mixer, until pale and fluffy. Mix in the lightly beaten egg

  2. Combine the rest of the ingredients with a spatula and mix until everything has been incorporated

  3. Refrigerate the dough for half an hour

  4. After 30 minutes, remove the dough from the fridge and preheat the oven to 180°C (355°F)

  5. Make 14 ball shaped cookies using an ice-cream spoon and arrange them on a baking sheet lined with parchment paper, leaving room for them to spread. Flatten the cookies with the back of the tablespoon

  6. Bake for 20-25 minutes, until golden. Chill them completely. When you remove them from the oven, they are still soft, but they will get firmer in a few minutes

Any left over cookies (we doubt you will have any) will keep in a jar for a few days.
